Menu Plan Monday 2/22/10

Well, I don't think my ranch dressing, yes, the one I was so excited about, is quite right. I like the taste when I first make it but then something goes off. I will keep working on it though! I WILL succeed! But to give myself a break, I made this creamy Italian dressing. It was pretty good. I've modified it enough that it is my own but I worked off of one on allrecipes.com.

Creamy Italian Dressing:

In a blender combine:

1/2 cup mayonnaise
1/2 cup buttermilk
2 Tablespoons extra virgin olive oil (you need extra virgin for the "fruity" flavor it brings)
1 Tablespoon chopped onion (or just cut off a slice and throw it in there)
1 Tablespoon sugar
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon garlic powder
Pepper to taste

Blend until smooth and creamy. Enjoy!

New Use for Old Dressing

Here is a new use for that homemade poppy seed dressing. Mix one cup poppy seed dressing with a half a cup of mayo. Stir in with a bag of coleslaw mix (or do like me and shred your own cabbage and carrots). It is better than any cole slaw your are going to get at the deli!

Feta Apple Spinach Salad with Poppy Seed Dressing

This one is a winner! Even if you think you only like iceberg salads with ranch, you will enjoy this salad. I promise ;)


Poppy Seed Dressing (from Comfort and Joy Goose Berry Patch Cookbook)
3/4 c. sugar
1/2 c. vinegar
1 t. salt
4 T. poppy seeds
1 T. dry mustard
1 T. onion, grated
1 c. oil (I used Canola)

Blend all ingredients and refrigerate. Shake well before using. Makes 2 cups.
Dice up half an apple (any type will work). Sprinkle feta cheese on a bed of baby spinach. Add the apple. Drizzle on the poppy seed dressing and enjoy!
